Pan-Seared Salmon

I absolutely LOVE seafood...from fish to shrimp, crab to scallops....I could eat any of it fresh every day for the rest of my life and be quite content! The biggest downside though is its expense. Seafood does tend to be much pricier than your typical chicken or beef, so my most valuable recommendation to you would be to price shop! Wait for it to go on sale and you can get some really great deals while still staying within your budget! Another great thing about most seafood is that simplicity is ideal...just a little salt & pepper or a bit of Old Bay seasoning and you're good to go. So here's my extremely quick and easy pan-seared salmon recipe:

Take your boneless salmon fillets and salt and pepper both sides well. Drizzle with a bit of extra virgin olive oil on both sides as well and rub evenly across the surface of the fish with your hands. In a hot pan, gently lay each fillet into it and cook on medium heat. Make sure to leave the fish down for 3-4 minutes to get a nice sear on that side. Once you get a golden crust on that side, flip the fillets over gently and cover the pan with a lid. Cook until you see that the other side has an equally golden color to it (it's ok to cut into the salmon a bit to make sure it's cooked all the way through, I do it all the time!). Sprinkle the top of each fillet with a little Old Bay seasoning (according to Ryan and every other Maryland-er I know, Old Bay is key to any seafood recipe!). Plate the salmon and
ENJOY!

Sounds delicious. Will try it real soon. Haven't found any orange roughy yet to do that other fish recipe I gave you, just remember you can use tilapia or another equivalent tasting fish that you like to cook. EnJOY your day!
